Braised Beef with Potatoes

**Ingredients:**

– 2 lbs beef short ribs or brisket, cut into chunks
– 4 large potatoes, peeled and cut into chunks
– 1 large onion, sliced
– 2 bell peppers, sliced
– 4 cloves garlic, minced
– 1 can diced tomatoes (optional)
– 1 cup beef broth
– 2 tablespoons olive oil
– 1 tablespoon soy sauce
– 1 tablespoon Worcestershire sauce
– 1 teaspoon dried thyme
– 1 teaspoon dried rosemary
– 1 teaspoon paprika
– Salt and pepper to taste

1. **Preheat the Oven:**
Preheat your oven to 325°F (165°C).

2. **Sear the Beef:**
In a large oven-safe pot or Dutch oven, heat the olive oil over medium-high heat. Add the beef chunks and sear on all sides until browned. Remove the beef from the pot and set aside.

3. **Cook the Vegetables:**
In the same pot, add the sliced onions and bell peppers. Cook until they start to soften, about 5 minutes. Add the minced garlic and cook for another minute.

4. **Combine Ingredients:**
Return the beef to the pot. Add the potatoes, diced tomatoes (if using), beef broth, soy sauce, Worcestershire sauce, thyme, rosemary, paprika, salt, and pepper.
