Cheesy Garlic Breadsticks

Ingredients

– 3 large russet potatoes, peeled and cubed

– 4 cloves garlic, minced

– 1/2 cup whole milk

– 1/4 cup unsalted butter

– 1 cup grated parmesan cheese

– 1 large egg

– Salt and pepper to taste

– Cooking spray or butter for greasing

– Fresh parsley, chopped (for garnish)

Preparation

1. Preheat your oven to 375°F, and lightly grease a 12-cup muffin tin with cooking spray or butter.

2. Place the cubed potatoes in a large pot and cover them with water. Bring to a boil and cook until the potatoes are tender, about 15-20 minutes.

3. Drain the potatoes well and return them to the pot. Add the minced garlic, milk, and butter, mashing the mixture until smooth and creamy.
