- 4 boneless, skinless chicken breasts
- 1 cup lump crab meat
- 1/2 cup breadcrumbs
- 1/4 cup mayonnaise
- 1/4 cup grated Parmesan cheese
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tbsp fresh parsley, chopped
- 1 tbsp lemon juice
- 1 tsp Old Bay seasoning
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp olive oil
Directions:
- Preheat your oven to 375°F (190°C).
- In a mixing bowl, combine the crab meat, breadcrumbs, mayonnaise, Parmesan cheese, chopped onion, minced garlic, parsley, lemon juice, Old Bay seasoning, salt, and black pepper. Mix until well combined.
- Using a sharp knife, carefully cut a pocket into each chicken breast by slicing horizontally, being careful not to cut all the way through.
- Stuff each chicken breast with the crab mixture, securing with toothpicks if necessary.
- Heat olive oil in a large oven-safe skillet over medium-high heat. Sear the stuffed chicken breasts for 3-4 minutes per side, or until golden brown.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).
- Remove the chicken from the oven and let it rest for a few minutes before serving.
