Ingredients
3 eggs
12 tablespoons sugar
12 tablespoons oil
12 tablespoons milk
12 tablespoons flour
Zest and juice of half a lemon
11g baking powder
20cm cake pan
Preparation
Preheat the oven to 180°C (356°F).
In a mixing bowl, crack open the eggs.
Add sugar to the eggs and mix until creamy.
Pour in the oil and mix well.
Gradually add milk while continuing to mix.
Sift in flour gradually to avoid lumps.
Add lemon zest and juice for a citrus flavor.
Finally, mix in the baking powder thoroughly.
Grease a 20cm cake pan and pour in the batter.
Bake at 180°C (356°F) for 25-30 minutes until golden brown and a toothpick comes out clean.
Once done, let the cake cool.
Optionally, dust with powdered sugar or add a lemon glaze for extra flavor.
