My hubby requests this almost every week

Ingredients
1 medium head of cauliflower
2 tablespoons cream cheese
1/4 cup heavy cream
1 teaspoon Dijon mustard
1 1/2 cups shredded cheddar cheese
1/4 cup grated Parmesan cheese
1/2 teaspoon garlic powder
Salt and pepper to taste
Chopped parsley for garnish (optional)

Directions
Preheat your oven to 375°F (190°C).
Cut the cauliflower into small florets and steam or boil until tender, about 5-7 minutes. Drain well.
In a large mixing bowl, combine the cream cheese, heavy cream, and Dijon mustard.
Stir in the shredded cheddar cheese, grated Parmesan cheese, garlic powder, salt, and pepper.
Add the cooked cauliflower to the cheese mixture and stir until well coated.
Transfer the mixture to a baking dish and bake for 20 minutes, until bubbly and golden on top.
Remove from the oven, garnish with chopped parsley if desired, and serve warm.
Variations & Tips

To switch things up, you can use a mix of different cheeses like Gruyère or mozzarella. If you’re looking to add some protein, tossing in some cooked bacon or diced ham can elevate this dish. For an extra kick, consider adding a dash of hot sauce or a sprinkle of smoked paprika to the cheese mixture. And for those extra busy nights, you can prep the cauliflower and cheese sauce ahead of time, then just combine and bake when you’re ready to eat!
