Ingredients

Preparation

Preheat and prepare the oven:
Preheat your oven to 350°. Preheat to F (177°C).
Prepare two 9-inch pots and place parchment paper in the bottom, leaving the parchment in place. Sprinkle with flour and remove excess.
Dry ingredient mix:
Sift the cake flour, baking powder and salt into a medium bowl. Sifting not only combines the ingredients but also softens the dough, making the cake smoother.
Butter and sugar:
In a large bowl, using an electric mixer, beat the butter and sugar for 3-4 minutes until light and fluffy. This process introduces air into the butter, which softens the cake.
Add the eggs and vanilla:
Add the eggs one at a time, beating well after each addition. Stir in vanilla extract.
Combine dry and wet ingredients:
Add dry and dairy ingredients alternately to butter mixture, starting and ending with dry ingredients. Mix until combined. It is important not to overdo it at this stage as this can cause gluten to form and the cake to harden.
To make the cake:
Divide the crust evenly among the prepared pans.
Bake for 25-30 minutes or until a toothpick inserted into the center of the cake comes out clean.
Bake the loaves: Let the
Loaves cool in the baking tins for 10 minutes, then transfer to a rack to cool completely. This prevents the bread from getting soggy.
Freezing and processing:
After cooling, the cakes can be painted and glazed or sprinkled with powdered sugar.

Tips for soft cakes:
Heating the ingredients: Make sure all your ingredients are at room temperature, especially the milk and eggs, so they can mix evenly.
Don’t overdo it: Stir ingredients until ingredients are combined. Too much can cause the gluten to harden and the cake to become tough.
Measure carefully: Be careful with your measurements, especially flour and sugar. Too much flour can make the cake heavier.
